

Chicken and Roasted Vegetables
When I don’t know what to cook or if I have lots of veggies in the fridge that need preparing, I like to improvise, cut everything in even slices, pour some olive oil over it and put it into the oven till they roast.
Ingredients;
(you can use these veggies or change them with others you prefer or have in your own fridge)
½ sweet potato
1 bunch of asparagus
1 box of mixed mushrooms
I haven’t used it here, but if I have it I also add one aubergine.
Method;
Preheat the oven to 170 degrees Celsius.
Wash and skin the chicken (I like it without skin, but either way is fine), coat it with some paprika and salt and put aside.
Wash and cut the vegetables in equal sizes, drizzle some olive oil over them, salt and add some spices as well, for a bit more flavour.
I like the sweet potatoes with paprika and a bit of cinnamon that enhances the taste, and for all the others I like to add a bit of garlic powder.
Mix them all together in the Pyrex tray and put them in the oven. I usually cook them for about 40-45min, but it depends on your oven. Prick the meat and sweet potatoes with a fork to see when they’re ready.
That’s it!
Very easy, very quick and you just made a good meal to be eaten with your family or over a few days by yourself, a very simple way to have more veggies in your diet.
