Chicken Curry

Serves 4


2 chicken breasts chopped into bite size pieces

2 onions chopped finely

1 large garlic chopped

1 medium sweet potato peeled and cubed

2 sticks of celery

300g broccoli chopped

1 courgette chopped

250ml of chicken or vegetable stock

1 tin full fat coconut milk

2 tsp cinnamon

1 Tbsp ground turmeric

1 Tsp ground coriander

Juice of ½ lime


  • Sweat onion and chopped garlic in coconut oil
  • Add spices and stir for 30 seconds
  • Add chopped chicken & stir to coat in spices
  • Add chopped vegetables and stock
  • Allow to simmer until vegetables and chicken are cooked approx. 30 mins
  • Stir in coconut milk and add lime juice to taste
  • Serve with brown rice or quinoa
  • Optional- Stir in chopped fresh coriander before serving
