Brazil Nut Pesto

Brazil nuts are a great source of selenium, an important mineral for thyroid function. This delicious pesto recipe is versatile and high in nutrients.


2 cups chopped fresh basil

1/2 cup extra virgin olive oil

1/4 cup pine nuts

5 Brazil nuts

1/3 cup grated Parmesan cheese

2 garlic cloves, minced


  • Add all basil into blender and blend with half of the olive oil
  • Slowly add in the nuts, cheese and the rest of the oil.
  • Pulse until you have reached desired consistency

You can enjoy pesto with baked fish and roasted vegetables as a meal. You can serve alongside scrambled eggs with mushrooms and spinach or simply as a snack with some oatcakes or rye crackers.
